Kitchen basics

Following the autoimmune paleo diet was foreign to me.  There is so much to learn at the beginning I found it overwhelming but I am continuously learning new things as I go with every new recipe that now I look forward to what I can accomplish next.

Once I got the hang of how to use the spiralizer, mandaline and food processor, believe it or not I had never used these before, I started to enjoy myself and look forward to preparing the next meal.  I was excited to explore this new way of eating, baking and cooking that I tried a new recipe a couple of times each week.

I found favourites, I always feel good after each meal, I have more energy each week because I’m healing and its easy to make food that tastes great.

Making almond milk was tricky and took me about three tries before I got it right. I still find it a chore to strain the pulp from the milk without getting some of the pulp in the jar of milk. It’s a process for sure but well worth it for the delicious recipes that call for it like vanilla creamer, breads, cookies, pizza crust, waffles and so much more.

jan feb 2016 283I like making spaghetti squash because it’s so easy, I love the taste and there are so many options to eat with it. Having a tomato or marinara sauce on hand is great to add to the spaghetti squash or Zucchini noodles or any roasted vegetables like squash, sweet potato, etc work just as good to switch things up. There are lots of recipes that have the perfect blends of spices, meat and vegetables to add to the sauce.

Zucchini noodles are a little more work but it is nice to make lots and have in the fridge ready to warm up for left over dinner nights.

When I make bread I make crock pot apple sauce too. It’s so easy and so good!

I always have coconut milk in my house and when I buy fresh banana, kiwi, blueberries, raspberries and strawberries you can bet I make coconut whipped cream for an added sweetness.

I love to have French Vanilla Creamer on hand for a treat. I love coffee so much I drink it black but when I feel like a sweet treat this always hits the spot! I only drink decaf as regular coffee bothers me.

Finally, the ultimate grain free cookie….Real Deal Chocolate Chip Cookies. This recipe took a while until I could try it because as hard as I tried I could not find chocolate chips or baking chocolate with no dairy or sugar anywhere. On day to my surprise they had it at Independent Grocers that didn’t have any allergens so I stocked up, I bought 5 each for two reasons; so I will have enough of hand when needed and in hopes that the store would see that it is a product they should continue stocking.
